FOOD difficulties

The FOOD is the hard part of this diet.  I made my first "egg white" omelet.  But why are egg whites yellow?  Weird but I digress.  The hardest part is ensuring that every meal, all 5 of them, contain protein, carb and fat.  It is actually the fat that is difficult.  Yesterday I had the most horrible concoction of Greek yogurt (14 g of protein), kiwi (carb) and a tsp of oil.  Yuk!
So if you have an idea of snacks that contain all the ingredients or maybe at our next meeting we can come up with a rule that makes the food easier.  For goodness sake we all know how to eat healthy but if we have to eat ridiculous stuff then doesn't it defeat the purpose of living? I wonder if at the end of the day we could just make sure that the protein, fat, carb ratio is good then we get our points.  (Not a cop-out just trying to make this work)  Comment on 1. good snacks and 2. how we can make the food easier.

  1. For my snacks, I find fruit and some kind of low-fat cheese to be easiest. I throw in a few nuts for my fat. I'm finding that I need less heavy snacks because of all the meals.

    For last night's dinner, I made tacos for the family and used the ground turkey on top of brown rice for my dinner. Also had lettuce and green beans. It was fairly easy. My fat was the olive oil I cooked the meat in.
    Tonight it's adventures in whole wheat pasta.

  2. I made a huge batch of Quinoa and throw it in my salads, eggs, everything! It is one of those easy and super foods. I just made a big batch of brown and wild rice. And I grilled a ton of chicken on Sunday, which is gone already. Everyone else is eating it too. I made oatmeal, with nuts, and blueberries and a tad of honey...yummy...i think the recipe is in the book.

    Good luck Jan it will get easier.

  3. I don't always combine the fat in with my meal...today I did a piece of deli turkey, a nectarine, and a spoonful of almond butter. Speaking of weird concoctions, last night I had the most disgusting bowl of cooked beets, black beans, and cooked kale. I shudder just remembering it. Still haven't quite mastered the food prep!
